Every year during the Thanksgiving – Christmas holiday season you’ll find my car loaded with jars of Chocolate Chip cookie mix— original and gluten-free. I’m out delivering the jars in hopes of catching people at home and getting a chance for a quick chat on how things are going and sharing a wish for happy holidays. It’s my way of saying thanks to past clients and business associates for doing business with me.

It’s such a treat for me to hear how so many people love the cookies and look forward to getting their jar every year.

So in case you get a craving and want some more of these cookies, I’m providing the full recipes below. Enjoy!

Nancy’s Chocolate Chip Cookie Recipe

1 ½ sticks of butter – room temperature

1 egg

½ tsp vanilla

Beat egg, butter & vanilla together. Add:

1 ¾ cup flour

½ cup sugar

¾ cup packed brown sugar

1 tsp baking soda

¼ tsp salt

Mix the dry ingredients into the butter/egg mixture until well combined.

Stir in:

1 cup of chocolate chips (more if you like them real chippy!)

I like to put the dough in the refrigerator for 30 min or more to firm up but you can start baking them right away. They will spread out more on the pan if you bake them right away.

Bake: 350 degrees until they reach your preferred color & doneness – 8-12 min. Enjoy!

Gluten Free Chocolate Chip Cookies

Preheat oven to 375 degrees. Line baking sheets with parchment paper.

¾ cup butter – room temperature

2 eggs – room temperature

1 tsp. vanilla

 Beat butter until smooth.  Add eggs one at a time and beat until combined.  Add vanilla and mix.

Add:

½ cup brown sugar

¼ cup sugar

2 cups gluten free flour

3/4 tsp baking soda

¼ tsp salt

 Mix until well combined.  Add:

1 cup chocolate chips

Stir well.  Drop by tablespoon onto baking sheets.  Bake 8-10 min.
